My week 3 wrap up, week 4 weigh in and goals for the week! Sorry for the glasses glare, but it was really sunny in my living room! 🙂 I’m down 1.4 from last week - for a total loss of 10.2 since 3/20/15 Woohoo!!
Made Vegan Sour Cream for the first time!
Lunch 🙂 Chickpea “egg salad” (mashed chickpeas with mustard and vegan mayo) sandwich, rainbow salad and a home made pickle 🙂
Dinner 🙂 Whole wheat angel hair pasta with a spicy tomato, artichoke heart, olive sauce. Sprinkled with fresh basil and cashew “Parmesan”. (9 PP for the WW people out there)

(Bobs Red Mill Steel Cut Oats, mixed in with home-made spiced apple sauce, sprinkled with brown sugar, and topped with slivered almonds and dried cranberries.)
Lunch! Broccoli "Beef" Soup made with Gardein Szechuan Beefless Strips, onions, green onions, broccoli, wheat soba noodles and vegetable broth. NUM YUMMY!
